Fat Mama’s Tamales will be closed on Wednesday July 4th, 2012.  We hope everyone has a safe and happy 4th of July, and Fat Mama’s will reopen at 11:00 am on July 5, 2012!

We would like to thank the Mississippi Development Authority for hosting the MS Market 2012 at the Trademart in the Jackson Fairgrounds.

Fat Mama’s Tamales Inc exhibited our “Knock-You-Naked” Margarita Mix and Fire & Ice Pickles and we far surpassed our expectations!  To all the old friends we were able to see again and the new ones we made, we had a great time seeing everyone.  We picked up a lot of new wholesale customers, and made some great contacts, who we are already in talks with regarding our products!  If you or someone you know has product or products and are interested in testing the waters at market, we highly recommend the Ms Market.  MDA goes out of their way to make sure all exhibitors are taken care of, and provide a great two days of market.

Again thank you to the MDA, our customers and everyone who has had a hand in Fat Mama’s Tamales over the last 20 plus years!

Bluffs & Bayous Magazine includes Fat Mama’s Tamales Restaurant in Natchez MS

Fat Mama’s Tamales was recently written up in Bluffs & Bayous Magazine by Jennie Guido.  It is great article and greatly appreciate her and everyone at Bluffs & Bayous for including us.  If you haven’t had a chance to read our article or this months issue, you can now read it online!

“Knock You Naked” Margarita Cupcakes Recipe

Mrs. Humes has brought a new recipe to us, for “Knock You Naked”  Margarita Cupcakes!

Try it out and let us know what you think!

Margarita Cupcakes
makes 24 cupcakes

1/4 cup lime juice
1/4 cup Fat Mama’s Knock You Naked Margarita Mix   (https://www.fatmamastamales.com)
zest of 2 limes
2 cups milk
1/2 cup canola oil
4 teaspoons tequila
2 cups sugar
1 teaspoon vanilla extract
2 2/3 cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Preheat oven to 350F. Fill 2 12-cup muffin tins with liners, and spray with nonstick cooking spray.

In a large bowl, mix together lime juice, margarita mix, lime zest, milk, oil , tequila, vanilla and sugar.

In a small bowl, mix together flour, baking soda, baking powder and salt. Add to lime mixture and stir until just combined. Divide evenly into muffin tins.

Bake for 18-22 minutes, until a tester comes out clean and the cakes spring back when lightly pressed.
Cool completely on a wire rack before frosting.

Tequila Lime Frosting

1/2 cup butter, softened (1 stick)
2 Tablespoons milk
3 Tablespoons lime juice
3 Tablespoons Fat Mama’s Knock You Naked Margarita Mix    ( https://www.fatmamastamales.com )
3 Tablespoons tequila
4 cups confectioners sugar, sifted
sugar, for “rims”

Cream the butter, milk, lime juice, margarita mix, and tequila in a stand mixer fitted with the paddle attachment.

Gradually add the sugar, scraping down the sides of the bowl every so often. Beat an additional 3-4 minutes.

Fill a pastry bag fitted with a #12 round tip. Pipe frosting onto cupcakes, and dip edges into green sugar to resemble salt on the rims of glasses.

Friends of the Library

The Krewe of Fat Mama’s has recently joined with the Friends of the Library, to help raise enough money to have the exterior of the George Armstrong Library repaired and painted, as it is in desperate need of funding for improvements.

You can help by donating financially to our cause!  $25 can buy an entire can of paint or you can adopt one of forty four shutters for $100.  Also you can simply donate money.

All donations are tax deductible and a receipt will be mailed once your donation is received and/or you can drop your donation off at Natchez Library or Fat Mama’s Tamales and a donation receipt can be issued.

The “Knock-You-Naked” Margarita Icebox Pie

Friends and Neighbors,

Our dear friend, The Queen, has been working in the kitchen and has come up with a delicious new recipe.

The “Knock-You-Naked” Margarita Icebox Pie

Here is the recipe, for you to give a try at the house!

1 – 9 inch graham cracker pie crust
1 – 8 ounce can of sweetened condenses milk
1 – 8 ounce tub of cool whip
1/4 cup of lemon juice
1/2 cup of Fat Mama’s “Knock-You-Naked” Margarita mix

Blend all ingredients with mixer until smooth, pour into your pie crust and refrigerate for at least 30 minutes!

Easy as The Queen’s “Knock-You-Naked” IceBox Pie!
